When I think of summer, I think of summer camp and the S'mores! Hours were spent by the fire roasting marshmallows on long sticks and placing that melted, ooey goodness on top of a piece of chocolate between two graham crackers. Yum. So why not take that delicious dessert and put it into milkshake form?
These S'more Milkshakes take all the classic S'more elements and combine them into a delicious, chocolate-y treat. They've even got toasted marshmallows and graham cracker crumbles to top them off. They're the perfect treat for summer.
You’ll first start off by making the chocolate syrup. This is what you'll drizzle into each glass to get that cool design. Start by whisking together cocoa powder, sugar, and salt in a small sauce pan. Add the milk to the pan and continue to whisk constantly until it begins to boil.
Reduce the heat slightly and stir a little longer before removing it from the heat, stirring in the vanilla extract, and chilling it for at least 30 minutes.
Next, make the whipped cream by mixing together the heavy cream and sugar until its light and fluffy. Set this aside to chill. Once your chocolate syrup has thickened, use a spoon to carefully drizzle it into each glass and place each glass in the freezer for 5-10 minutes. You'll have some syrup leftover to use on all other kinds of desserts!
For the chocolate frosting, blend the butter with a handheld or stand mixer until light and fluffy. Add in the powdered sugar, cocoa powder, and heavy cream and mix until combined.
Using an offset spatula or butter knife, carefully spread the chocolate frosting around the outside rim of each glass. Place a few mini marshmallows along the frosting rim. Crush the graham crackers into small pieces and roll or sprinkle them over each glass until the frosting is fully covered.
Use a small kitchen torch to carefully torch the marshmallows, being careful not to melt the frosting. Now you're ready to make your milkshake! Add your chocolate ice cream, milk, three of the graham crackers, and half of the mini marshmallows to a blender and blend until combined.
Pour the milkshake into two glasses and top off each glass with a dollop of whipped cream and the rest of the crushed graham crackers. Enjoy!

Ingredients
Chocolate Sauce
- 21 grams (¼ cup) unsweetened cocoa powder, sifted
- 99 grams (½ cup) sugar
- ⅛ tsp salt
- 56 grams (¼ cup) milk
- ½ tsp vanilla
Whipped Cream
- 113 grams (½ cup) heavy cream
- ½ tbsp sugar
Chocolate Frosting
- 2 oz (¼ cup) unsalted butter, softened
- 56 grams (½ cup) powdered sugar, sifted
- 21 grams (¼ cup) unsweetened cocoa powder, sifted
- 1 ½ tbsp heavy cream
- 2 graham crackers (full rectangle)
S'mores Milkshakes
- 5-6 scoops chocolate ice cream
- 4 graham crackers (full rectangle)
- 170 grams (¾ cup) milk
- 21 grams (½ cup) mini marshmallows
Instructions
Chocolate Syrup
- Whisk together the cocoa powder, sugar, and salt in a small saucepan.
- Add the milk and stir the mixture constantly until it begins to boil.
- Reduce the heat slightly so the mixture continues to simmer for about 30 seconds.
- Remove the chocolate syrup from the heat, stir in the vanilla, transfer to a heat safe container, and chill for at least 30 minutes.
Whipped Cream
- Combine heavy cream and sugar in a medium sized bowl. Mix on medium-high with a handheld or stand mixer until somewhat stiff peaks have formed. Cover and refrigerate until ready to use, slightly whisking before using if need be.
Chocolate Frosting Rim
- Blend butter until light and fluffy.
- With the mixer on low, add powdered sugar, cocoa powder, and heavy cream. Continue to mix on medium-high for about two more minutes, until combined. Set aside.
Assembly
- Use an offset spatula or knife to carefully spread the chocolate frosting along the outside rim of each glass.
- Place a few mini marshmallows along the frosting rim.
- Crush the graham crackers into small pieces and roll or sprinkle them over each glass until the frosting is fully covered.
- Use a small kitchen torch to carefully torch the marshmallows, being careful not to melt the frosting.
- Chill glasses in freezer.
- Once the chocolate syrup has thickened, use a spoon to drizzle it on the inside of both glasses. Place the glasses in the freezer for 5-10 minutes.
- Puree ice cream, three of the graham crackers, milk, and half of the mini marshmallows in a blender until thick and creamy.
- Crush the last graham cracker into small pieces.
- Top each milkshake with a spoonful of whipped cream and the rest of the crushed graham crackers.
- Enjoy!
