Piña Colada

When it's this hot outside I always crave something ice cold and refreshing. This Piña Colada is just that with the perfect balance of pineapple, coconut, and rum. It's super easy to make and is ready in minutes!

Frozen pineapple, pineapple juice, cream of coconut, and rum are blended together to make this delicious tropical cocktail. If you like you can serve it over ice, but it will already be ice cold from the frozen pineapple.

I recommend blending the frozen pineapple first to break it down. You might need to scrape down the sides of your blender with a spatula.

Next add in the pineapple juice, cream of coconut, and rum and blend until combined. Pour into glass and serve immediately. Enjoy!

If you like, you can make this a mocktail by omitting the rum!

Ingredients

  • 1 cup frozen pineapple
  • 4 oz pineapple juice
  • 3 oz cream of coconut
  • 2-3 oz dark rum
  • ice, if desired

Instructions

  1. Blend frozen pineapple for 10-15 seconds until its broken down. Scrape down the sides of the blender with a spatula if needed.
  2. Add pineapple juice, cream of coconut, and rum and blend until combined.
  3. Pour into glass and serve immediately. Enjoy!

Notes

  • This recipe makes two smaller drinks. You can double it to fill larger glasses like the ones I have pictured.
  • You can omit the rum to make this a mocktail.
