These Color Changing Lemon Cocktails are tart yet sweet with magical color changing capabilities. Lemonade, vodka, simple syrup, and a little bit of butterfly pea powder come together for one fun and beautifully colored drink. Adding the cocktails to an Erlenmeyer flask makes them feel even more like a science experiment!
The combination of the acidity from the lemonade and the butterfly pea powder gives you that pretty color transformation to a dark, deep purple. Butterfly pea powder doesn't really taste like much so you still enjoy that lemon taste from the lemonade.
A FEW NOTES BEFORE WE GET STARTED
- This recipe makes one cocktail, but can easily be doubled or tripled to make more than one.
- If you don’t like lemonade, you can use limeade. The acidity is needed to give you that beautiful color from the butterfly pea powder.
Dry Ice
- IMPORTANT: DO NOT touch dry ice! It is so cold that it will burn you.
- Dry ice can be found at most grocery stores. I recommend calling ahead to make sure they have it. If you can't find it at your local Ralphs/Kroger's, Von's/Pavilions, or Walmart, I've had luck finding it at Smart and Final. You'll most likely need to go to the cashier for them to pull it from the backroom. One pound is more than enough.
- Dry ice doesn’t keep long, so I recommend buying it no more than an hour or two before you need it. I kept my bag of dry ice wrapped in some paper bags and placed in a cooler before I was ready to use it.
Let's get started! Add ice to a cocktail shaker followed by lemonade and simple syrup. Shake well and strain into a food safe Erlenmeyer flask or glass.
Combine vodka and butterfly pea powder in a small bowl and whisk together until combined. Carefully pour butterfly pea powder syrup into the glass and watch as the color changes, using a spoon or straw to stir it together.
Use tongs to carefully drop a small piece of dry ice into the drink. Let dry ice dissolve for five minutes before drinking. Enjoy!
