Peanut Butter Chocolate Chip Cookies

These Peanut Butter Chocolate Chip Cookies are the perfect treat for the peanut butter and chocolate lovers out there. They're soft with crispy edges and chocolate chips in every bite. The peanut butter gives them just the right amount of a salty taste that is balanced well with the sweetness of the chocolate.

I love how easy these cookies are to make. I recommend chilling the bowl of dough for about 10 minutes to give it a chance to firm up slightly before scooping, but other than that it comes together really quickly. So quickly that you can have a cookie sheet of them in front of you in just under 30 minutes.

A FEW NOTES BEFORE WE GET STARTED

Preheat oven to 350º. In a stand mixer fitted with a paddle attachment, blend together the butter, sugars, and peanut butter on medium speed until combined. Scrape down the sides of the bowl.

Add in the egg and mix until combined. With the mixer on low, add in the flour, baking soda, and salt and mix just until combined, scraping down the sides of the bowl as needed. Gently fold in most of the chocolate chips, leaving a few aside to place directly on top of the cookies.

Place the bowl of dough in the fridge to chill for at least 10 minutes.

Using a 2 tablespoon scoop, form cookies into balls.

Place each cookie on a parchment lined cookie sheet a few inches apart. Place remaining chocolate chips on top of each cookie.

Bake the cookies for about 12-14 minutes. Let the cookies cool for about 10 minutes on the baking sheet before carefully moving them to a cooling rack. Enjoy!

Notes

  • Leftover cookies can be stored in an airtight container for up to one week but are best when enjoyed within the first few days.
  • Cookie dough can be made ahead, scooped, and placed in a ziploc bag to be frozen for up to two months. Once you’re ready to bake, let the dough sit at room temperature for about 15 minutes and bake. You’ll need to add on an extra 5 minutes or so to the original baking time.
