There are many desserts that make me think of my childhood, and these Brownie Bites are towards the top of that list. There were many a potluck or school event that had brownie bites just like these on the table. They could be plain or covered in granulated or powdered sugar, and they were always my favorite with their small size and their rich, fudgy centers.
These Brownie Bites are the perfect way to enjoy a delicious, fudgy brownie in bite sized form. You can enjoy them plain, covered in granulated sugar, or covered in powdered sugar. Baking them in a mini muffin pan makes them the perfect size and gives you the excuse to eat as many as you want.
A FEW NOTES BEFORE WE GET STARTED
- Room Temperature Ingredients:Eggs: You want to make sure that the eggs are at room temperature to ensure that they are properly incorporated. If you forget to leave them out before you start baking, place them in a bowl of warm water for about 15 minutes until they become room temperature.
- Measuring Your Ingredients:I strongly encourage that you use a kitchen scale to measure your ingredients and ensure that you have the most accurate measurements possible.
- However, if you don’t have a scale on hand and will be using cup measurements, make sure to use the “spoon and sweep” method when measuring to avoid packing in too much of any dry ingredient.

Preheat oven to 350º. Heat butter and chocolate in a double boiler or in the microwave, stirring it until it melts. Transfer chocolate mixture to a stand mixer, add sugar and mix on medium until it is well blended.
Add eggs, one at a time, followed by the vanilla extract, and mix until combined, scraping down the sides of the bowl as needed. In a separate bowl, whisk together the flour, cocoa powder, and salt.
With the mixer on low, slowly add in the flour mixture to the chocolate mixture and mix just until combined. Coat a mini muffin pan with baking spray. Use a small cookie scoop or spoon to scoop the batter evenly into the pan and smooth it out until it is even.
Bake brownies for 17-18 minutes until a toothpick inserted in the center of it comes out clean. Cool for 15 minutes on a cooling rack before gently placing a cooling rack on top of the pan and flipping the brownies out. Leave plain or roll in granulated or powdered sugar. Enjoy!

- 2.5 oz (5 tbsp) unsalted butter, softened
- 4 oz bittersweet chocolate, finely chopped
- 198 grams (1 cup) sugar
- 1 tsp vanilla extract
- 2 eggs
- 90 grams (¾ cup) flour
- 21 grams (¼ cup) cocoa powder, sifted
- ¼ tsp salt
- Granulated or powdered sugar for topping

Notes
- Leftover brownies can be kept in an airtight container at room temperature for several days.
- Brownie bites can also be individually wrapped and stored in the freezer too.
