These Mint Chip Brownies combine a rich and fudgy brownie with a light, fluffy mint flavored frosting. Adding chopped chocolate on top gives them an added bit of crunch.
Adding crème de menthe to both the brownies and the frosting gives them the perfect minty flavor without being too overpowering, and that fresh mint flavor balances out well with the rich chocolate.
A FEW NOTES BEFORE WE GET STARTED
- Room Temperature Ingredients:
- Eggs: You want to make sure that your eggs are at room temperature to ensure that they are properly incorporated into your batter. If you forget to leave them out before you start baking, place them in a bowl of warm water for about 15 minutes until they become room temperature.
- Measuring Your Ingredients:
- I strongly encourage that you use a kitchen scale to measure your ingredients and ensure that you have the most accurate measurements possible.
- However, if you don’t have a scale on hand and will be using cup measurements, make sure to use the “spoon and sweep” method when measuring to avoid packing in too much of any dry ingredient.
- Oven Temperature:
- Make sure to preheat your oven for at least 15 minutes before you start baking.
- I recommend purchasing an oven thermometer to get to know your oven so you can adjust your baking temperatures accordingly. Some ovens run slightly warmer or colder so its important to know yours to make sure your baked goods come out right.

Now let's get started! Line an 8 or 9 inch square pan with parchment paper and preheat your oven. Heat up the butter and chocolate in a double boiler or in the microwave, stirring just it until it melts. Go ahead and transfer this chocolate mixture to a stand mixer, add in the sugar and crème de menthe, and mix on medium until it is well blended.
If the mixture is still hot, let it cool slightly before adding in the eggs, one at a time, mixing until combined and scraping down the sides of the bowl as needed. In a separate bowl, whisk together the flour, cocoa powder, and salt before adding it into the chocolate mixture and mixing just until combined.
Carefully pour the batter into the pan and smooth it out with an offset spatula until it is even. These brownies will bake for 30-35 minutes until a toothpick inserted in the center of it comes out clean.
Once the brownies are out of the oven and cooling in their pan, you can get started on that lightly, fluffy mint chip frosting. Start by creaming together the butter and cream cheese until smooth and then add in spoonfuls of powdered sugar followed by the crème de menthe and a drop of green food coloring. Scrape down the sides of the bowl and mix until light and fluffy.
Once brownies have completely cooled, gently spread frosting over them and then top with finely chopped chocolate. Cut brownies into four rows. Turn and cut into another four rows to make sixteen squares. Chill in fridge until ready to serve.

Mint Chip Brownies
- 5 tbsp (2.5 oz) butter
- 4 oz bittersweet chocolate, finely chopped, plus more for topping
- 198 grams (1 cup) sugar
- 3 tbsp crème de menthe
- 2 eggs
- 90 grams (¾ cup) flour
- 21 grams (¼ cup) unsweetened cocoa powder
- ¼ tsp salt
Mint Chip Frosting
- 5 tbsp (2.5 oz) unsalted butter, softened
- 4 oz cream cheese, softened
- 2 ½ tbsp crème de menthe
- 312 grams (2 ¾ cups) powdered sugar, sifted
- 7 grams (½ tbsp) heavy cream
- green food dye (optional)
- Bittersweet chocolate, finely chopped, for topping
Instructions
Mint Chip Brownies
- Preheat oven to 350º.
- Line an 8 or 9 inch square pan with parchment paper so that it hangs over the sides.
- Heat butter and chocolate in a double boiler or in the microwave, stirring it until it melts.
- Transfer chocolate mixture to a stand mixer, add sugar and crème de menthe, and mix on medium until it is well blended.
- Add eggs, one at a time, and mix until combined, scraping down the sides of the bowl as needed.
- In a separate bowl, whisk together the flour, cocoa powder, and salt.
- With the mixer on low, slowly add in the flour, cocoa powder, and salt to the chocolate mixture and mix just until combined.
- Carefully pour the batter into the pan and smooth it out until it is even.
- Bake brownies for 30-35 minutes until a toothpick inserted in the center of it comes out clean.
- Cool for 30 minutes on a cooling rack before gently running a knife around the edges of the pan and gently lifting them out of the pan by the parchment paper.
Mint Chip Frosting
- Cream together the butter and cream cheese until smooth.
- With the mixer on low, slowly add in spoonfuls of powdered sugar followed by the crème de menthe and a drop of green food coloring.
- Scrape down the sides of the bowl and mix until light and fluffy.
Assembly
- Once brownies have completely cooled, gently spread frosting over them.
- Top with finely chopped chocolate.
- Cut brownies into four rows. Turn and cut into another four rows to make sixteen squares. Chill in fridge until ready to serve.

Notes
- Leftover brownies can be kept in an airtight container at room temperature for several days, but they are best enjoyed in the first day or so.
