Saint Patrick's Day is already next week, and I'm all for creating fun desserts to help celebrate. What kind of fun desserts, you ask? Well, these Chocolate Irish Cream Milkshakes are one option!
These Chocolate Irish Cream Milkshakes are rich, creamy, and decadent. They have just enough Irish Cream to get that delicious, creamy taste without being too overpowering.
Plus, their sprinkle covered rims add an extra pop of color and give you another delicious thing to snack on since you can use your spoon to scoop up the frosting and sprinkles in between sips!
A FEW NOTES BEFORE WE GET STARTED.
- Measuring Your Ingredients:
- I strongly encourage that you use a kitchen scale to measure your ingredients and ensure that you have the most accurate measurements possible.
- However, if you don’t have a scale on hand and will be using cup measurements, make sure to use the “spoon and sweep” method when measuring to avoid packing in too much of any dry ingredient.

You'll first need to get started by making the chocolate frosting that will go around the rim of each glass. Blend the butter with a handheld or stand mixer until light and fluffy. Add in the powdered sugar, cocoa powder, and heavy cream and mix until combined.
You’ll want to use an offset spatula or butter knife to carefully spread the chocolate frosting around the outside rim of each glass. You don't need to worry about it looking perfectly smooth since you’ll be covering it up with lots of sprinkles.
Go ahead and pour the sprinkles onto a small plate and carefully roll each glass in the sprinkles, ensuring that they cover the chocolate frosting completely. Pop each glass into the freezer to chill until you’re ready to assemble your milkshakes.
Now you're ready to get started on the whipped cream. Combine the heavy cream and sugar in a small bowl and mix on medium-high until somewhat stiff peaks form. Pop the bowl into the fridge while you get started on making the milkshake.
Add the chocolate ice cream, milk, and Irish Cream into a blender and blend just until combined. I recommend starting off with 1 tablespoon of Irish Cream, tasting it, and then adding up to another tablespoon if you want it to be stronger.
And now we bring together all three elements! Slowly fill each glass with the chocolate milkshake mixture, being careful to not let it drip down onto the sprinkle covered rim. Top each milkshake off with a dollop of whipped cream and more sprinkles and enjoy!

Ingredients
Chocolate Frosting Rim
- 2 oz (¼ cup) unsalted butter, softened
- 56 grams (½ cup) powdered sugar, sifted
- 21 grams (¼ cup) unsweetened cocoa powder
- 1 ½ tbsp heavy cream
- Sprinkles, plus more for topping
Whipped Cream
- 113 grams (½ cup) heavy cream
- 1 tbsp sugar
Chocolate Irish Cream Milkshakes
- 5-6 scoops of chocolate ice cream
- 170 grams (¾ cup) milk
- 1-2 tablespoon Irish Cream
Instructions
Chocolate Frosting Rim
- Blend butter until light and fluffy.
- With the mixer on low, add powdered sugar, cocoa powder, and heavy cream. Continue to mix on medium-high for about two more minutes, until combined.
- Use an offset spatula or knife to carefully spread the chocolate frosting along the outside rim of each glass.
- Pour sprinkles on a small plate and carefully roll each frosting covered rim in sprinkles, ensuring that they fully cover the frosting.
- Chill glasses in freezer.
Whipped Cream
- Combine heavy cream and sugar in a medium sized bowl. Mix on medium-high with a handheld or stand mixer until somewhat stiff peaks have formed. Cover and refrigerate until ready to use, slightly whisking before using if need be.
Chocolate Irish Cream Milkshakes
- Puree ice cream, milk, and Irish Cream in a blender until thick and creamy. I recommend adding 1 tablespoon of Irish Cream, tasting it, and adding up to another tablespoon if you want it to be stronger.
Assembly
- Pour milkshake into each glass, being careful not to let any drip on the sprinkle covered rim.
- Top each milkshake with a spoonful of whipped cream and more sprinkles.
- Enjoy!
Notes
- Milkshakes are best enjoyed immediately.
- This recipe makes 2 milkshakes but can be doubled if needed.
