Raspberry Liqueur Milkshakes

A delicious raspberry coulis is drizzled inside the glass to make a beautiful design. Vanilla ice cream, milk, and raspberry liqueur are blended to create a creamy, decadent milkshake, and the whole thing is topped with a spoonful of whipped cream and more raspberries!

Ingredients

Raspberry Coulis

  • 6 oz raspberries
  • 74 grams (6 tbsp) sugar
  • 1 1/2 tbsp water

Raspberry Milkshakes

  • 4-5 scoops of vanilla ice cream
  • 170 grams (3/4 cup) milk
  • 1/2 tbsp raspberry liqueur

Whipped Cream

  • 113 grams (1/2 cup) heavy cream
  • 1 tbsp sugar

Instructions

Raspberry Coulis

  1. Combine raspberries, sugar, and water in a saucepan and heat over medium low heat. Stir until raspberries have melted down and the sauce is syrup-like.
  2. Pour through a fine mesh strainer into a heatproof bowl or glass and chill until ready to use.

Whipped Cream

  1. Combine heavy cream and sugar in a medium sized bowl. Mix on medium-high with a handheld or stand mixer until somewhat stiff peaks have formed. Cover and refrigerate until ready to use, slightly whisking before using if need be.

Raspberry Milkshakes

  1. Puree ice cream, milk, and raspberry liqueur in a blender for 10-15 seconds until thick and creamy.

Assembly

  1. Carefully drizzle raspberry coulis along the sides of two tall glasses. Freeze glasses for 5-10 minutes.
  2. Pour milkshake into each glass.
  3. Top each milkshake with a spoonful of whipped cream.
  4. Enjoy!

 

Notes

  • Milkshakes are best enjoyed immediately.
