Strawberry Heart Lollipops

These Strawberry Heart Lollipops are such a fun treat to make, especially for Valentine's Day. They're flavored with strawberry candy oil and a drop of red food coloring gives them the most beautiful and vibrant color.

Ingredients

  • 312 grams (1 cup) light corn syrup
  • 227 grams (1 cup) water
  • 396 grams (2 cups) granulated sugar
  • 1 tsp strawberry candy oil
  • red gel food coloring

Instructions

  1. Prep silicone heart lollipop mold with lollipop sticks.
  2. Combine corn syrup, water, and sugar over medium heat until it begins to boil.
  3. Continue to cook it, without stirring, until it reaches 300°F.
  4. Remove from heat and stir in candy oil and food coloring.
  5. Immediately and carefully pour mixture into the mold, being careful not to overfill.
  6. Rotate each lollipop stick around to fully cover them and make sure they don't rise to the top.
  7. Hit against the counter to level out any bubbles in the mold, without tapping on the mold directly. You can also use a toothpick for the bigger bubbles.
  8. Let sit for about 20 minutes until it's fully set. Remove from the mold. You can use a kitchen torch to smooth out any other texture on them, but only briefly to not melt them. Enjoy!

Notes

  • Lollipops will last several months if stored in an airtight container.
