Everyone loves a classic coffee cake, but I decided to mix things up and make one that's a little more fall focused. This Apple Cinnamon Coffee Cake is soft and fluffy with a layer of apple cinnamon and a cinnamon streusel topping.

Ingredients

Cinnamon Streusel Topping

  • 134 grams (2/3 cup) light brown sugar
  • 94 grams (3/4 cup) flour
  • 2 tbsp cinnamon
  • 84 grams (6 tbsp) unsalted butter, chilled and cubed

Apple Filling

  • 1/2 a pink lady or honeycrisp apple
  • 1 tsp sugar
  • 1/2 tsp cinnamon

Apple Cinnamon Coffee Cake

  • 4 oz (1/2 cup) unsalted butter, softened
  • 53 grams (1/4 cup) light brown sugar
  • 148 grams (¾ cup) sugar
  • 2 eggs
  • 113 grams (½ cup) sour cream
  • 180 grams (1 ½ cups) flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 ½ tsp cinnamon

Vanilla Icing

  • 85 grams (¾ cup) powdered sugar
  • 1 ½-2 tablespoon heavy cream

Instructions

Cinnamon Streusel Topping

  1. Combine the brown sugar, flour, cinnamon, and butter for the topping in a small bowl.
  2. Mix together with your hands, gently massaging the dry ingredients into the butter.
  3. Continue to mix until the butter is in pea sized pieces or slightly larger.
  4. Chill until ready to use.

Apple Filling

  1. Slice the 1/2 an apple into thin slices.
  2. Combine the apple slices, sugar, and cinnamon in a bowl and set aside.

Apple Cinnamon Coffee Cake

  1. Preheat oven to 350º F.
  2. In a stand mixer fitted with a paddle attachment, cream the butter and sugars together on medium speed until light and fluffy.
  3. Add the eggs, one at a time, with the mixer on medium speed, and scrape down the sides of the bowl as needed.
  4. Add the sour cream followed by the flour, baking powder, salt, and cinnamon. Scrape down the sides of the bowl as needed and mix just until it is incorporated.
  5. Prep an 8 inch springform pan by coating it with cooking spray.
  6. Carefully pour half of the batter into the pan and smooth it out with an offset spatula.
  7. Add a layer of apple slices on top of the batter until it is fully covered. Sprinkle about half of the streusel evenly on top of the apple slices.
  8. Top with the rest of the batter and carefully smooth it out.
  9. Add the remaining apple slices on top of the batter. Sprinkle the remaining streusel evenly on top.
  10. Bake for 50-52 minutes until a toothpick inserted into the center of the cake comes out clean.
  11. Cool for 30 minutes on a cooling rack before gently running a knife along the edges. Place the pan on top of a small jar or cup and gently open the pan, pushing the sides of the pan down off of the base to release it.

Assembly

  1. Sift the powdered sugar into a small bowl and pour in the cream. Whisk together until combined.
  2. Transfer the vanilla icing to a pastry bag or use a spoon to drizzle the icing onto the cooled cake in a zigzag motion.
  3. The cake is best served slightly warmed. Enjoy!

Notes

  • Leftover cake can be placed in an airtight container and kept at room temperature for several days. It is best enjoyed slightly warmed in the microwave.
