This Mini Skillet Brownie is so rich and fudgy, but super easy to make. It's the perfect dessert because it can be topped off with a scoop of vanilla ice cream fresh out of the oven and quickly eaten right out of the pan.

Ingredients

  • 35 grams (2 1/2 tbsp) unsalted butter
  • 2 oz bittersweet chocolate, melted
  • 99 grams (1/2 cup) sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 45 grams (6 tbsp) flour
  • 10.5 grams (2 tbsp) cocoa powder
  • 1/8 tsp salt
  • 21 grams (2 tbsp) chocolate chips

Instructions

Mini Skillet Brownie

  1. Preheat oven to 350º F.
  2. Heat butter and chocolate in a double boiler or in the microwave, stirring it until it melts.
  3. Transfer chocolate mixture to a large bowl, add sugar, and mix on medium speed until it is well blended.
  4. Add egg and vanilla and mix until combined, scraping down the sides of the bowl as needed.
  5. With the mixer on low, slowly add in the flour, cocoa powder, and salt to the chocolate mixture and mix just until combined.
  6. Fold in the chocolate chips, being careful not to overmix.
  7. Carefully pour the batter into a greased 6" skillet.
  8. Bake brownies for 28-30 minutes until a toothpick inserted in the center of it comes out clean.
  9. Top with ice cream and enjoy!

Notes

  • Leftover brownies can be kept in an airtight container at room temperature for several days, but they are best enjoyed in the first day or so.
  • This recipe can be doubled for a larger skillet.
