Ingredients

  • 2 oz (1/4) cup unsalted butter, softened
  • 53 grams (1/4 cup) brown sugar
  • 49 grams (1/4 cup) white sugar, plus more for topping
  • 67 grams (1/4 cup) creamy peanut butter
  • 1 egg yolk
  • 90 grams (3/4 cups) flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 250º F.
  2. In a stand mixer fitted with a paddle attachment, blend together the butter, sugars, and peanut butter on medium speed until combined. Scrape down the sides of the bowl.
  3. Add in the egg yolk and mix until combined.
  4. With the mixer on low, add in the flour, baking soda, and salt and mix just until combined, scraping down the sides of the bowl as needed.
  5. Place the bowl of dough in the fridge to chill for about 10 minutes.
  6. Form dough into a ball and place on a parchment lined cookie sheet. Press it down slightly so that it is about 4 1/2 inches in diameter.
  7. Pour more sugar on a small plate. Carefully pick up the dough and roll the top and sides of it in the sugar before placing back on the cookie sheet.
  8. Bake the cookie for 28-32 minutes. Let the cookie cool for about 10 minutes on the baking sheet before carefully moving it to a cooling rack.
  9. Enjoy!

Notes

  • Leftover cookies can be stored in an airtight container for up to one week but are best when enjoyed within the first few days.
