Ingredients

Herb Scones

  • 240 grams (2 cups) flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp finely chopped fresh herbs
  • 4 oz (1/2 cup) unsalted butter, chilled and cubed
  • 113 grams (1/2 cup) buttermilk
  • 1 egg

Topping

  • 1 egg
  • 2 tsp water

Instructions

  1. Preheat oven to 400º F.
  2. Combine the flour, baking powder, salt, and herbs in a large bowl.
  3. Add butter to the flour mixture and blend together with a pastry blender or your hands until the butter pieces are pea sized.
  4. Whisk together the buttermilk and egg in a small bowl.
  5. Pour the buttermilk mixture into the flour mixture and stir with a fork until it begins to come together.
  6. Gently knead the dough together while it is still in the bowl to make sure it is fully combined.
  7. Turn the dough out onto a lightly floured surface and lightly sprinkle with a little bit of flour.
  8. Using your hands, form the dough into a circle that is about 7.5" in circumference. Cut the dough into 8 even wedges and spread the wedges out evenly on a parchment covered cookie sheet.
  9. Whisk together the egg and water in a small bowl. Carefully brush the tops of each scone with egg wash.
  10. Bake for 17-19 minutes until the sides and bottoms are lightly browned.
  11. Enjoy!

Notes

  • Scones are best served fresh. Leftovers can be placed in an airtight container and stored at room temperature for several days.
  • Scones can be reheated slightly in the microwave or oven.
  • I used rosemary and thyme but any fresh herbs will work well, just make sure they are finely chopped.
