Ingredients

  • 6 oz butter (3/4 cup) butter, softened
  • 396 grams (2 cups) sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 300 grams (2 1/2 cups) flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup jimmy sprinkles

Instructions

  1. Preheat oven to 350º.
  2. In a stand mixer fitted with a paddle attachment or in a large bowl with a handheld mixer, blend together the butter and sugar on medium speed for about 2-3 minutes until light and fluffy.
  3. Scrape down the sides of the bowl with a spatula before adding in the eggs, one at a time, and the vanilla extract. Continue to mix on medium speed until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. With the mixer on low, add in the flour mixture and mix just until combined, scraping down the sides of the bowl as needed.
  6. Gently fold in the jimmy sprinkles, being careful not to overmix.
  7. Carefully scoop dough onto a piece of plastic wrap, wrap tightly, and refrigerate for at least 30 minutes.
  8. Once the dough is well chilled, use a 2 tbsp cookie scoop to scoop cookies and place them several inches apart on a parchment lined cookie sheet. Six fit well on a large cookie sheet as they spread quite a bit.
  9. Bake the cookies for about 14-15 minutes. Let the cookies cool for about 10 minutes on the baking sheet before carefully moving them to a cooling rack.
  10. Enjoy!

Notes

  • These cookies are best enjoyed the same day, but will last for several days when stored at room temperature in an airtight container.
  • The dough can be made 1-2 days in advance, tightly wrapped in plastic wrap, and chilled in the fridge. Let it sit out for 10-15 minutes before scooping and baking.
  • If you don't have jimmy sprinkles, nonpareils or sparkling sugar will also work.
