School has started, which always has me feeling sentimental for the days of fresh school supplies and new beginnings. It also makes me think of those school lunches I used to take in my tin lunch box, which almost always consisted of the classic PB and J.
These PB and J Cookies take the best parts of your childhood lunches, like the creamy peanut butter and sweet strawberry, and put them together in a delicious cookie! Each one is rolled in sugar for an added crunch. Why not treat yourself to the classic PB and J, but in cookie form? You deserve it.

This week I’m back in the kitchen with another fun summer recipe, but this time it takes the classic S’more and turns it into a delicious, super simple cookie.
These S’mores cookies are easy to make, but still have all the s’more elements you’re looking for. Finely ground graham cracker is worked into the dough and sprinkled on top while bits of chocolate and marshmallow are spread throughout. Each bite has that ooey gooey chocolatey marshmallow goodness with a hint of toasted graham cracker.

Summer is here, and I’m ready to start baking with all of the summer berries. Pies, cakes, tarts – you name it. But one thing I really wanted to dream up this year is a cookie that would feature all of my favorite berries: raspberries, strawberries, and blueberries- a Triple Berry Cookie!
These Triple Berry Cookies are sweet and soft, with all the bold berry flavors of summer that you love. Freeze dried raspberries, strawberries, and blueberries are finely crushed and added into the dough. A small scoop of each dough is combined to make the coolest design, and each cookie is rolled in sugar to give it that crackled, crunchy top. It’s truly the best.
