These Jack O’Lantern Stained Glass Cookies are easy to make and give sugar cookies a fun twist. Plus, with the help of some melted yellow and orange hard candy, they look just like the real thing!
Sugar cookie dough
Pumpkin shaped cookie cutter
Small cookie cutters in common shapes or a small pairing knife
A handful of yellow and orange hard candies
A mortar and pestle or small plastic baggie and rolling pin
Cookie sheet lined with parchment paper
Prepare sugar cookie dough as directed by recipe, adding orange food coloring to the dough before wrapping it is plastic wrap and chilling it in the fridge.
Once your dough has been chilled, carefully roll it out until it is about ¼ inch thick. Cut out as many pumpkins with your cookie cutter as you can before gathering the dough together and repeating the same process.
Transfer pumpkin cookies onto a parchment lined baking sheet and chill for at least 10 minutes.
Using various small cookie cutters in common shapes, or a small pairing knife, cut out two eyes and a mouth from each pumpkin. Place back in the fridge to chill.
Crush up orange and yellow hard candies using a mortar and pestle or a rolling pin. The candy should be somewhat small, but not so small that it is ground into a powder.
Carefully spoon the pieces of hard candy into each eye and mouth, being careful not to get it on the rest of the cookie. Gently use a toothpick to guide the candy into each corner. Remove any excess candy from the face of your pumpkin.
Chill the pumpkin cookies at least 15 minutes before baking as directed.
Once the cookies have cooled, hold them up to the light to see the spooky effect!
